Summary of Duties:
Under the general direction of the Gray W Executive Chef/Sr. Associate Director of Athletics, Events & Facility Operations and Gray W, this position encompasses both creative and analytical responsibilities by bringing the WSU Athletic Performance Nutrition mission to life through the benchmarking, testing and validation of current and proposed menu offerings. This position will also assist the Senior Executive Chef with production and execution of special events. This position requires a blend of highly developed culinary creativity with a demonstrated knowledge of high volume food production. Practical operational capabilities must include: food costing and related financial skills, practical experience with both quantitative and qualitative evaluation of foods and food equipment/procedures, and a demonstrated ability to effectively train peers and unit-level Chefs in support of new recipe implementation.
Responsibilities include: recipe development, testing and analytical evaluation of recipes and products. Frequently responsible for the culinary supervision of cook leads, food service worker leads, student and temporary employees. Also responsible for training and presentation of concepts and products, assist with maintenance of the internal recipe and costing database and the efficient sourcing and management of the test kitchen product inventory.
The sous chef supports the organizational mission and culinary philosophy. Assists with the long and short term planning of the Gray W Legends Lounge. Facilitates and supports objectives, policies, standards, and procedures of WSU Athletic Performance Nutrition. Contributes to a positive and harmonious work environment.
Required Qualifications:
A Bachelor’s degree in hotel and restaurant administration, institutional management, business administration or closely related field and one (1) year of supervisory/management experience including planning and budgeting. Any combination of relevant education and experience may be substituted for the educational requirement on a year-for-year basis.
Preferred Qualifications:
Experience working with Athlete Performance Nutrition programs in a NCAA athletics program.
Experience planning and directing food preparation in a professional kitchen.
Experience as working chef and/or cook within a performance nutrition/training table environment.
Demonstrated work experience of successful supervision and training of a diverse work staff.
An Executive Sous Chef certification from an accredited culinary institution.
Experience with a menu management software system that provides nutritional values and standardized performance-based recipes.
Experience with recipe or daily special development including culinary knowledge and experience to sufficiently write instructional sequences and scale ingredients within a recipe in accordance to recipe quantity.
Serve Safe certified.
Experience with sustainable food procurement and production.
Ability to assist with development of work flow in a professional kitchen to ensure the highest quality of sanitation, safety, and satisfaction is met.

Monthly Salary: $4,061 - $4,570 | Commensurate with qualifications and experience

Individual placement within the range is based on the candidate’s current experience, education, skills, and abilities related to the position.
